tarts galore!

Back when I was a little kid, I used to look forward to when my parents would bake tarts. To me it meant Christmas was round the corner!
So when it came time to make tarts, I would head to the kitchen, grab my piece of pastry, sit next to my mom and knead, shape and basically play with the dough. I never forgot the smell of unbaked dough.
And as part of my parents little tradition, they would make me an 'L' shaped tart!
So when I came home one night, I was hit with the unmistakable waft of unbaked dough.. I asked my mom how come they were making tarts in August!! Turns out, someone ordered it, so lucky for us, that means leftovers!

They use a mould for the tart but my mom cuts each flower to put on top.

My traditional 'L' shaped tart. Little Lauren gets her own too!

Trust me, this is finished in no time in my house!

There you have it, Pineapple Tart heaven!

happy 44th singapore!

A sugee cake to celebrate the Nation's birthday!

top of the hill

Recently we attended my aunt's 90th birthday party and my dad was asked to make the cake. I think his latest 'IT' colour is red. But since it's my favourite colour, I love it. This was a big 5kg sugee cake.

This time he opted to alternate little hearts and little flowers.

So gorgeous. many a time I've sat with him to watch him decorate a cake. And he always takes the time to make sure it's done properly. He really does this with love and I think you can see that in his cakes =)

Much love!

ring o' ring o' rosies

I think my dad has honed his icing skills to perfection! He added some small flowers to brighten up the cake.

These are the silver dragees he normally uses. They're hard, and sweet and every kid loves 'em.

My friend ordered this for her friends birthday. She wanted a chocolate cake and purple icing. For chocolate cakes, my dad only makes chocolate buttercream because he reckons it tastes better that way. And chocolate cake does not go with royal icing. So I decided to make the buttercream. It was a simple buttercream because I didn't have the candy thermometer required to make the Swiss Meringue Buttercream. But it turned out alright after I added some butter flavouring. I hope so at least. Normally he would use royal icing for the lettering but I happened to have gel icing in purple no less! So it all worked out and my friend told me it turned out great so yay for Rosie!

another small wedding cake

Love the detail and the gorgeous red roses.

These are some of the decorations used for wedding cakes.

And finally, the whole cake. This was a small sugee cake, cover in home-made marziapn and iced with royal icing.

Chocolatey Goodness!

This dense, rich chocolate cake was made and decorated by my dad for my friend's 21st birthday. He makes the frosting himself as well. He doesn't have the key-shaped pan so what he does is make 2 cakes and cut out the shape himself. He's pretty ingenious, my dad. He's made this design a few times already. But other 21st requests have seen him shaping the cake into the numbers 2 and 1 and most recently, he had a request to do it in Roman numerals, XXI. That was pretty cool. A waste I didn't get a shot.

Sugee Wedding Cake

Here's a few (blurry) pictures I took of the wedding cake my dad made recently. Both tiers are real cakes as opposed to dummies some hotels provide. His tallest one is five-tiers. This is the traditional Sugee Cake. He covers the Sugee Cake with homemade marzipan (which me and Lauren can't stop snacking on). And on top of the marzipan he decorates the cake with Royal Icing. Momma is the decorater and you have her to thank for the decorated knife (not shown in the pics) and the assembly of roses. So Gorgeous and Yummylicious!
